Chocolate Cupcakes

I learnt how to make these chocolate cupcakes at work and I completely fell in love with them. When I got invited to my friend's engagement party, I offered her and her fiancé that I could bake some for them. They agreed and some of the guests who tasted them came to ask me how I made them. So, if you'd like a recipe, just let me know, it's pretty simple:)

  1. Ingredients: (12 cupcakes)
    150g butter
    150g caster sugar
    175g self-raising flour
    3 eggs
    2 tbsp cocoa powder
    1tbsp vanilla extract

    Preheat the oven to 180 degrees. Line cupcake pans with paper liners. Whisk the eggs with caster sugar until smooth and foamy. Add the rest of the ingredients and beat for one minute. Spoon cupcake batter into paper liners until 1/2 to 2/3 full. Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes in pans then remove and place on wire racks to cool completely. Once cupcakes are completely cooled, frost with chocolate ganache.
    Ganache: 2 cups of fresh cream
    2 cups of dark chocolate (chocolate bars)
    Melt the chocolate and then slowly add two cups of fresh cream. Leave to cool for a couple of minutes in the refrigerator.
