Delish Spinach & Feta Tartlets


I found these delicious tartlets in one amazing cooking book and baked several times. I loved them so much that I made them with my sister for our New Year's party and they disappeared from the table in a few minutes:) Lovely taste of feta cheese, nutmeg, spinach and pine nuts will make your taste buds go crazy!

  1. Pastry:
    125 g plain flour
    Pinch of salt
    75 g cold butter
    ½ tsp ground nutmeg
    1 – 2 tbsp cold water

    Filling:
    250 g baby spinach
    25 g butter
    150 ml double cream
    3 egg yolks
    125 g feta cheese
    50 g pine kernels
    salt & pepper

    For the pastry: Mix all the ingredients in a bowl and refrigerate for at least 30 minutes. Take a bit of the dough and push it firmly into the tart cases and bake for 10 – 15 minutes or until golden (200 degrees). Place the cases aside.
    Filling: Heat the butter in a pan and add the spinach, salt & pepper, egg yolks and double cream. Cook it for 3 minutes and then leave to cool.
    Put 3 – 4 dices of feta cheese into each tartlet and then divide the mixture among the tart cases, put a few pine nuts on top of it and return to the oven for 10 – 15 minutes. Allow to cool for 5 minutes before removing from the tins and serving.
