Duck


It took me some time to come up with something what I could satisfy my parents with when they came to visit me to Dublin. They both are very traditional if it comes to food. I didn't have much of choice, they don't eat fish and chicken, I didn't want to prepare beef and they often eat pork, so I made duck with cherry sauce and potato burger. I was so happy when they told me that they loved it! Well, duck is fab:)

  2. I mostly buy breasts of duck in Asian Markets. It’s pre-cooked and delicious. I only put the meat on a baking tray and roast in the oven on a very high temperature for 10 - 15 minutes.


    Cherry Sauce
    Ingredients:
    1 can cherries
    1tbsp corn starch
    Salt
    3tbsp red wine
    2tbsp lemon juice
    You can use rosemary and a bit of maple syrup

    Drain cherries, keep syrup. Combine cherry syrup, corn starch and salt in a small pan, gradually stir in maple syrup and cook over a medium heat stirring constantly until thick, add cherries, wine and lemon juice and cook for further 5 minutes.
    Serve with duck and potatoes.
