Healthy starter


I decided to make this healthy starter when we had visitors from Sweden and as everybody knows, the swedish are generally very healthy people, so I thought it was a very appropriate decision. Very simple chickpeas humus with raw vegetables!

    400g can chickpeas
    3 tbsp tahini
    juice of 3 lemons
    3 garlic cloves, chopped
    ½ tsp salt
    paprika for sprinkling

    Drain and rinse the chickpeas, reserving 4 – 6 tbsp of the liquid from the can. Place the chickpeas in a blender with 3 tbsp of the reserved liquid. Add the tahini, lemon juice, and garlic, then blend well for a few seconds until smooth and creamy. Add a little more of the liquid from the can if required. Season to taste with salt. Transfer the hummus to a small bowl, sprinkle with paprika, and serve at room temperature. Cut whatever vegetables you like into big pieces and serve with the humus.
