Vegetarian Burger


I don't know if you feel the same, but sometimes I'm fed up with meat and want to eat something vegetarian. It seems lighter, although this veggie burger isn't the case, and just healthier. This one was made of boiled cauliflower, proccesed peas and eggs. I served it with salted crisps, but French fries or vegetables are of course suitable as well.

  1. Ingredients: (8 burgers)
    1 big cauliflower
    1 can of proccesed peas
    2 eggs
    2 - 4 tbsp of plain flour
    Salt & pepper

    For the coating:
    225g fresh breadcrumbs

    Preheat the oven to 220 degrees. Boil the cauliflower in a large pot for 5 minutes or until soft. Drain the cauliflower well, then let it cool a bit. Crash the cauliflower with potato masher, add drained peas, eggs, flour, salt & pepper and mix well, and then shape into 8 round cakes. Put breadcrumbs in a bowl and roll the cakes in it. Put them on a baking tray and bake for 10 – 15 minutes. You can also fry them, but I find it much healthier not to :)
    Good with chunky chips, or served on burger bun with lettuce, tomato and cucumber.

  2. you can add any herbs you desire, it's also good with ham, but then it's not really vegetarian:)
