Cajun Chicken with Couscous & Green Beans


I've wanted to cook couscous for so long and finally I did it yesterday. I bought ordinary dry couscous at Tesco and cooked it according to packet instructions. Not really difficult:) I found some lovely green beans in the fridge and fried them with onions and garlic. Then mixed it all up with couscous and served it as a side dish with Chicken Drumsticks! Very light summery dinner. I totally recommend it!

  1. For 200g Couscous:
    Place couscous into a heatproof bowl and add 250ml of boiling water. If desired add a knob of butter and salt to taste. Cover and leave for 5-10 minutes. Separate grains with a fork before serving. I also added chopped chives!

    6 chicken drumsticks ( for 2 servings)
    100g green beans
    1 onion
    3 cloves garlic
    1tbsp butter
    2tsp Cajun seasoning
    fresh chives
    olive oil
    Preheat the oven to 200 degrees.
    Place chicken and Cajun seasoning in a bowl, and toss to coat, then add a bit of olive oil and mix well. Place chicken on a baking tray with 1tbsp of butter and a bit of water, cover with aluminium foil and bake until tender (about 30 - 35 minutes). Fry 1 chopped onion, add 3 chopped garlic cloves and 100g of fresh green beans and let it cook for a few minutes. Mix it all up with couscous and serve hot with your lovely cajun chicken. Hmmmmmmmmmm...it's so tasty :)
