Job well done!

Hello! I'm sorry that I haven't written a thing in past few days. My exams are finally over and I feel like I can live a little again. Well, at least until the next and final semester is finished. It's been stressful and painful, but I survived and I hope the results will be alright. After my exam I met up with Stefan in town and we went to our favourite Japanese restaurant Yamamori. I ordered their lunch box and Stefan had his usual Seafood Yaki Soba. Then we had a stroll through the city centre and bought new fragrance. The lady who served us was so sweet and she totally made our day, she gave us DKNY freebee! I feel like I deserve a good quality evening with my boy and our lovely friends.

One down! Two to go!!

Hey! I have just arrived home from my exam and I found lit candles, sushi, and some juicy grapes from Stefan! What a nice surprise. So happy now! My next killer exam is in just 3 days. I wonder how I'm going to study in such a short time but hey what has to be done, has to be done. Sleep tight.

Quick Dinner

Hi! I'm sorry about the little break in posting. I have so much to study for my tomorrow's and Saturday's exams, and I worked over the weekend that I had almost no time for anything else. I hope you all are well! I just cooked quick dinner for Stefan and I and now it's time to study again. We ate tenderloin and roast vegetables with Greek cheese and herbs. It was really easy, I just sliced the tenderloin, marinated quickly in garlic, lemon pepper and salt, then fried for 5 minutes and popped it in the oven for other 10 minutes. The vegetables are roast in the oven for 35 minutes with some olive oil, Greek cheese and herbs. Have a lovely evening.

Ginger and Loxie

By the way, I forgot to tell you about something. As you might know our fish Princess disappeared a while ago (you can read about that here). She might have been eaten by Scar! But when I asked a pet specialist the other day he told me that we would find some body parts in the tank (that’s weird to write). We searched the tank several times and found nothing. So because the tank was so empty and Scar looked lonely we had to get him some new friends. We bought two lovely Oranda Goldfish. We assume they are girls so we call them Ginger and Loxie.  They are swimming around all the time and Scar seems to be enjoying their company. I hope he won’t eat them!

Don't waste your time on eggs

This should make our lives easier! Does it sometimes happen to you when you peel boiled eggs they look awful? I hate that most of the times 5 out of 10 eggs I peel look like crap. This video shows how easy it could be if you simply blow ;) Have a good day!

Cheesecake

When I see a cheesecake I start drooling immediately! Whatever cheesecake it is! I’ve made cheesecakes several times before and I must say I enjoyed making this one the most. I made it with a very good friend of mine who now lives back home in the Czech Republic. We had so much fun when we baked together that day. The photo was taken on our balcony a few months ago. I think that all of us should treat ourselves every now and then. So if you like cheesecakes like me, try this one!

For the crust:
1 cup digestive biscuits
4 tbsp margarine, melted


For the filling:
4 packs Philadelphia or any cream cheese, softened (200g each)
1 1/2 cup caster sugar
3 tbsp plain flour
4 eggs
1/4 cup sour cream
1/4 cup double cream
2 – 3 egg yolks
1 tsp vanilla extract


Method:
Preheat oven to 160 °C. Butter 22 cm spring form pan. Wrap outside of pan with double layer of aluminium foil. Melt the butter in a saucepan over a low heat. Add the digestive biscuit crumbs and stir until well combined. Remove from the heat and tip the mixture into the flat tin, then use the base of a metal spoon to press it evenly and firmly all over the base and sides of the tin. Place on a baking tray and bake for 5-10 minutes. 

Meanwhile, beat cream cheese until smooth, using mixer (about 5 minutes). Combine sugar with flour and slowly beat sugar mixture into cream cheese, small amount at a time until smooth (another 5 minutes). In bowl stir together eggs, sour cream, double cream, yolks and vanilla until smooth. Gradually beat egg mixture into cheese mixture until well combined. Pour batter into baking tin / pan. Place pan in large baking pan on oven rack; fill baking pan with water halfway up sides of spring form pan. 

Bake 1 1/2 hours or until centre of cheesecake is set. Remove from water bath; remove foil. Cool on wire rack for 30 minutes; cool completely in refrigerator about 3 hours or over night.

I made a lovely and very simple sauce from mixed berries. I basically popped a bag of defrosted berries in a pot with a little bit of water, added one tea spoon of lemon juice, a little bit of caster sugar (depending on how sweet you want your sauce to be) and when it started to simmer I added ½ teaspoon of powdered gelatine. Serve the sauce while it’s hot on a cooled cheesecake. Heaven!!!

The Sound Of Music

I am one of those who listen to all kinds of music genres. And I think there is nothing wrong with that. I totally love all the divas such as Whitney, Beyoncè, Celine and Gaga, and time to time I listen to completely different artists. The Muse, for example, always cure the weird moods and inspire me to do things. There are days when I listen to some of their songs for hours and hours.

How do you feel about Eurovision? I love Euphoria by Loreen who is representing Sweden this year. The moment I heard the song I knew it would be big. I have read and heard from people that the song might win the whole thing! I hope it will.

It's Time!

Hey! I was kidding about the curly hair, ok! I have a hair stylist at home and we were having a bit of fun before! This is how my new haircut looks when it's styled.

I am posting a video of one commercial that I really love. When I first saw it I fell instantly in love with the guy in it! Cutie! Every time I watch this commercial I get very emotional. I wish all of you could take a moment and watch it. I think it is beautiful. It’s time!

Whip me!

I just got back home from work. What a day! It was so busy today, sold many expensive shoes for kids. Crazy! Today is Easter Monday and we have this tradition back home in the Czech Republic. You should go carolling on Easter Monday and symbolically whip girls (using pomlázka) on the legs and possibly douse them with water (the symbolic meaning is to chase away illness and bad spirits and to bring health and youth for the rest of the year to everyone who is whipped) but the reality is rather different.

Guys usually whip the girls so hard that it leaves marks on their legs for weeks, then they splash buckets of ice cold water so they are completely drenched, use about half a bottle of the cheapest perfume they can find and on top of that they ask for some shots or Easter eggs. If I was a girl, I wouldn’t even bother opening the door!!! By 11am you can see loads of guys (of all ages) drunk walking in the streets everywhere you look.

Enough about Easter now! I got my haircut yesterday...yeah again. My hair grows so fast! This time I asked my boyfriend to cut it for me. It turned out quite nice, except for the shaved 10cm long line at the back of my head! I can't wait to return the favour to him, hahahaha.

Happy Easter Egg Lovers!

Hey! To all of you who celebrate Easter hope you had an eggcellent one. I am celebrating this year's Easter with loads of Strategic Management materials for my next week's exam. Fun! Each year I celebrate Easter with a lot of food and friends, but not this year. I can't believe I didn't even go out last night. That's how dedicated I am! Haha.

Souvenir

Do you remember when I wrote about this amazing seafood we ate in Malta? It was most definitely delicious, but I think the food was contaminated. It doesn’t look so from the photo below, does it?

How can something this pretty be so vicious?

 A couple of days after we came back from our holiday both Stefan and I started to feel bad. We both had terrible stomach problems and fever. We had to go to the hospital!!  After we waited long 12 hours our lovely doctor took some blood samples and put us on a drip. Oh how amazing it felt to be connected to the juicy, energy giving drip! The whole thing wasn’t a pleasant experience, but at least we found out what it’s like to be hospitalized in Ireland. Our first time!!! It took a while, but we are fully recovered now.

Malta

Even though we were very sad about Princess we still had to go on our holiday in Malta! The flight was very early in the morning, but that was ok. At least we had the whole afternoon in Malta. It was a little cloudy the first day, but we enjoyed the warm breeze and the feeling of being abroad.


Our hotel in Sliema was absolutely fabulous, and because we were there off season it was quite cheap too! The first night we went for a long walk and explored the area a bit. We ended up eating in one Maltese restaurant (Gululu) and I ordered Spaghetti biz-Zalza tal-Fenek, which is spaghetti with rabbit sauce. I read that when you are in Malta, you have to taste their rabbit. I must say that I was a little unsure about rabbit, but the one I ate at Gululu was absolutely gorgeous.


What a tasty combo of carrots, peas, garlic, parsley and tomatoes. The next day we went on a bus tour around the island. I really like the sightseeing bus tours. We hopped off in a couple of places and walked around a little. Stefan and I were very impressed with Mdina. What an extraordinary city. If you ever go, visit this old capital of Malta (it was built about 1500BC).


As you can imagine, after the whole day (sunny day) on the bus and no suntan cream, our faces turned bright red. Oh yeah, we will never learn a lesson. It happens every time the sun comes up. We feel like we have to tan as much as possible. I guess it has something to do with us being in Dublin where the sun shines only a few days a year ;) We went out that night and it was a great party. We went to Klozet which is a local gay club. We met a few nice people who we danced and drank the whole night with. The day after 2 friends who we met at the club invited us for a cup of coffee and offered us a small tour. It was very nice of them to show us around. Later on we spent the rest of the day in bed, because the hangover was terrible. The day after we went on another trip to Gozo and Blue Lagoon in Comino. That was absolutely amazing. When we arrived in the blue lagoon we felt like in a paradise. There were almost no people, the sun was shining, the water was crystal clear and I swam!!! I was hesitant at first, because the water was really cold, but then I took a deep breath and jumped! What a fantastic day.


On the way to the harbour we were showed some amazing caves and headed back to Malta. The last day of our stay we were picked up by another friend we made during our stay. He picked us up and drove us around the southern part of Malta. He showed us loads of intersting places and we ate our last dinner in one cute fishing village. The seafood was stunning. Our now Maltese friend drove us close by places we didn't know existed in Malta. We had no idea that the Megalithic Temples are even older than the Pyramids. Thank you for showing us! We have been back from Malta for over a week now and we truly miss the lovely weather. Something went wrong with the weather over here in Ireland in past few days. So damn cold!!!

Where is Princess?!

It's been over a week now since our fish Princess Oranda disappeared! I still can't believe it. When I got home from work on Thursday I wanted to feed Scar and Princess as I was going to college that evening and Stefan was out with work. I first thought she was hiding in the skull that we have in the tank when I didn't see her at first. But then after a few moments I started to worry a bit. I turned the lights on, knocked on the wall of the tank, looked everywhere and even took the filter apart. But Princess was gone! Missing! Was she eaten by Scar? Did her friends rescue her just like they did in the film Finding Nemo? Is she still hiding? It's a mystery! We miss you so much Princess!
