When I was shopping fruit and veggies for the rest of the week today, I caught a glimpse of pak choi and right in that moment I knew I would cook Tom Yam Soup for myself and Stefan. It is a little bit different to Thai Red Curry Soup but just as good. You can find the recipe here, it is in the comments! Instead of sugar I used Honteri sweet sauce today. I usually let the soup simmer with all the bits and pieces and then I strain it to a clean pot so there are no surprises in your bowl. I ate this soup with some soba noodles and vegetables, Stefan had some chicken as well.
