Tom Yum Dinner




When I was shopping fruit and veggies for the rest of the week today, I caught a glimpse of pak choi and right in that moment I knew I would cook Tom Yam Soup for myself and Stefan. It is a little bit different to Thai Red Curry Soup but just as good. You can find the recipe here, it is in the comments! Instead of sugar I used Honteri sweet sauce today. I usually let the soup simmer with all the bits and pieces and then I strain it to a clean pot so there are no surprises in your bowl. I ate this soup with some soba noodles and vegetables, Stefan had some chicken as well.

Burn that fat!

I can’t believe that it’s been over 2 months since I last went to the gym. After Malta I got sick, then I had exams, then I was sick again and then?? Then I found other excuses! I’ve always struggled with weight. Since I was 12 years old I have been on like a million diets. I think that I have tried everything. A few years ago someone gave me a book “fit for life” that’s changed my life. I am not saying that it was easy, but I lost weight, felt better and didn’t put on double of weight after a short break. I did a great job before because I changed my whole life style. But lately I have been very naughty. It was extremely tough when I ran for 3 minutes on the treadmill today, of course!  I am out of shape!!! I have been feasting like crazy in past 2 months! Today is the day I am starting with “fit for life” style!

My lunch! Instead I could have eaten properly combined sandwich ( toasted whole grain bread, butter, tomato, avocado, cucumber and lettuce).


Well, I started right after the gym this morning. I went to a local shop where I bought loads fruit and veggies that should keep me going for a while. I will try to post about what I eat and cook. Feel free to ask for whichever recipes you want and take a look at the energy ladder I copied from the book. Fingers crossed, it’s summer after all!

A.M.

- fresh fruit and fruit juices, fresh vegetable juices & salads, steamed vegetables, raw nuts, seeds

Sunday Delight


I felt a little bit sad that I had to work the whole day today. The weather was just fabulous again and I had to stay inside for most of the day. Afer work I walked home and when I passed by our little garden in the courtyard I was surprised to see Jennie and Stefan waving at me with a glass of sparkling drink in their hands. When I came closer I saw a lovely display of food and a smoking grill behind them. They prepared delicious marinated pork loin, big chunks of fresh vegetables and bagels with chopped garlic & olive oil. I was so happy. We grilled the goods and went up to our apt where we ate it all. Thank you so much for a special Sunday evening. Kram!






Jennie's & Stefan's Marinade:
5tbsp olive oil
3tbsp soya sauce
2cloves chopped garlic
ground rose peppe & salt

Loreen, you did us proud!

This has been a nerve wrecking evening. We knew from the moment Loreen performed in Melodifestivalen that she would be huge. She is one talented and beautiful artist. Yeah I kinda love her. So, Stockholm it is!!!





 Jennie, Stefan and I cooked lovely dinner and then we watched the Eurovision. The guys in Baku did a great job!! I must say that so many songs were really amazing this year. Well done yous all!!

Prawn Mix:
1 bag of peeled prawns
1 creme fraische or sour cream
1/2 chopped red onion
3tbsp mayonnaise
fresh dill
salt
pepper

It's really good with some red caviar too!

B.B.Q. Time!

Hiya! I can't believe how warm it's been in past few days. It feels amazing! It is time for barbecue! Two lovely girls I have worked with for a couple of years are leaving and they are throwing a goodbye barbecue party. I have made a salad that I learnt from my sister and some lovely vegetarian tofu skewers. I hope you will like them girls. Best of luck in your future and don't forget that I will always be there for mad nights out :D


Tofu Skewers

Zuzka's Salad


Skewers:
1 pack of Tofu
1 red pepper
1 yellow pepper
1 red onion
broccoli
mushrooms

Marinade:
3tbsp olive oil
1tsp parsley
1tsp paprika
1tsp Gyros spice mix


Zuzka's Salad:
1 can of sweet corn
1 can of garden peas
1 sliced red pepper
150g sliced ham
4 grated hard boiled eggs
3tbsp mayonnaise
chopped leek or spring onions

Swan Nest

Hello! What a nice day! The weather has been so bad in past few weeks that the sight of the sun feels super amazing, even though it is quite cold outside. I had a nice walk in town this morning. When I saw a beautiful couple of swans nesting by the canal in town I wondered why did they build their nest so close to all the walkers, dogs, and the road? When I took a closer look I noticed that there was plenty of food around the nest. The swans are some smart birds. People who pass by feed them, take photos of them so I guess the lovely couple enjoys the attention. I think it is a brilliant idea. I can't wait to see the little ones when they hatch. I sure will take some sneaky photos when they are out of the eggs :)

Tonight is the night!

Hello dear readers! As I am very happy about my provisional grades from my past two exams I am going WILD tonight. I think that I will break all the no smoking, eating healthy and no drinking (as I have been trying to be good in the past few weeks). I just feel like I need to go crazy tonight. I hope I won't end up being wasted within 2 hours and go home though, lol. So tonight my friends, my boy and I are going to a Summer Eurobash party in town. It should be good craic! We are first going to eat some nice chicken wings and have a pint or two in Ranelagh, which is a really nice part of Dublin, and then stroll down to Temple Bar where the party is :D Have a brilliant weekend and to all of you who survived this exam period - WELL DONE!
